Tuna Stuffed Avocados

I was working at the chiropractic when a patient started talking about tuna, they had gone fishing recently and had caught a tuna. of course this was right around lunchtime so I was starving! I was coming up with different recipes in my head that i could make when it hit me "Tuna Stuffed Avocados! I figured it was a good idea since Avocado season is starting to leave us.

I've tried to make stuffed avocado before and I never figured out that you actually have to scoop out the inside of the avocado so that you have room to actually "stuff" it. I saw a tip on Tastemade on how to make "the Perfect Stuffed Avocados" so i was really excited to try it out.

I wanted to try to make the tuna without mayo so I decided to try it with lemon juice and the avocado meat(insides). 

Dice up the onion and red pepper and mix it together with the lemon juice, tuna and avocado meat

Tuna Stuffed Avocado
  1. 4 Avocados
  2. 2 Cans of Tuna
  3. 1/2 Onion
  4. 1/2 Red Pepper
  5. 1 tsp lemon juice
  6. Salt and Pepper to taste
  1. Cut the onion and red pepper into small diced chunks
  2. Mix in lemon juice and Tuna
  3. Scoop out the insides of the avocado to make bigger "boats"
  4. Add the scooped out avocado to the tuna and mix together thoroughly
  5. Enjoy!
