Blueberry Banana Dairy Free & Sugar Free Ice Cream

For True Banana Lovers!!

Being dairy/sugar free and the one thing I have missed the most is Ice Cream. Recently I crave that creamy, delicious dessert more than I do chocolate...and that's a  lot. Whenever I go to the store I always sneak a look at the ice cream section to see if there could possibly be a new ice cream brand that I could try out that won't make me want to curl up into a ball and avoid life for a while, but sadly I always get my hopes up for nothing. So I have decided to try a couple different recipes that sound good and see which I like the best, so far I have only tried one of them and so far it's looking promising.

   It's made out of 3 simple ingredients :Banana, Blueberry, and coconut milk. At first I was worried that it would have the gooey consistency of a mushed banana, but I won't as along as you eat it frozen and don't let it sit out for 15-20 minutes, it's rather enjoyable! 

    First thing you'll need is a food processor or blender of sorts, I know of a few people who use nutribullets as a replacement, so it really anything that has a blade should work. Before doing anything you'll want to freeze your bananas and blueberries, this will start the creamy part of your ice cream.

After those have fully froze, you'll mix them together in the food processor and add the coconut milk, which will fluff your ice cream just a bit. Then you'll want to put it back in the freezer for a few more hours till it is the consistency of ice cream.

Blueberry Banana Ice Cream
  1. 2 Bananas
  2. 1/2 C Blueberries
  3. 1/4 C Coconut Milk
  1. 1) Freeze Banana and Blueberries for 30-45 minutes
  2. 2) Blend frozen fruit in a Food Processor (or Blender) until smooth
  3. 3) Add in Coconut Milk (or other alternative milk) to give it a creamy and fluffy texture
  4. 5) Pour into a container and freeze for 4-6 hours
  1. (Optional) Chocolate Sauce or Nuts are a great topping for this healthy dessert
